Emma + Dan's Intimate Wedding Day at The Ridge, Nelson Bay

On June 28th, 2024, we had the pleasure of catering Emma and Dan's beautiful wedding at The Ridge in Nelson Bay. It was a day filled with love, laughter, and unforgettable food experiences.

Emma and Dan opted for a 6-Course catering package, including 3 x Canapés served post-ceremony, plus an individually plated entree, main course, and dessert.

The incredible menu we served up is as follows:

Post-Ceremony Canapés: As guests mingled and celebrated, they were treated to a delightful selection of canapés:

  • Blistered Perino Tomato Tart with caramelised onion, Hunter Valley feta, pesto, and black olive.

  • Portobello Mushroom Arancini featuring leek, thyme, parmesan, and truffle lemon.

  • Wagyu Beef Tataki on a puffed sesame crisp, with tomato chilli jam, wakame, and togarashi aioli.

Entree: The first course set the tone for the meal with a delectable Eggplant Parmigiana, complemented by roasted tomato romesco, mozzarella, pesto, and black olive.

Main Course: For the main event, we served a succulent Braised Beef Brisket paired with creamy potato salad, charred broccolini, romesco, and crispy kale. We also ensured our vegetarian guests were delighted with equally exquisite alternatives.

Dessert: To finish the meal on a sweet note, guests enjoyed a rich Belgium Chocolate Brownie topped with espresso cream, toasted hazelnut crumb, and strawberry.

Bar Service: In addition to the delicious food, the wonderful team at Wild Ivory Mobile Bar provided a complete bar service. Their skilled bartenders crafted delightful cocktails including:

  • Amaretto Sour

  • Elderflower Collins

Other beverages served included a selection of red wines, beers, vodka, and soft drinks, ensuring that every guest had their favourite drink in hand throughout the evening.
